Fig and Gorgonzola Salad


& Classic Fruité Vert

Serves 4
  • 250g / 9oz mixed salad leaves
  • 6 ripe figs
  • 200g / 7oz gorgonzola
  • 20g / 0.7oz pine nuts
  • 20g / 0.7oz honey
  • 20g / 0.7oz butter
For the vinaigrette:
  • 1 shallot
  • Pinch of salt
  • 1/3 glass of balsamic vinegar
  • 1 glass of olive oil

Mince the shallots. Pour onto them the olive oil and vinegar, then the salt.

Cut the figs into quarters, then fry them for 1 minute with the butter and honey.

Pour the vinaigrette on the mixed salad leaves.

Add the coarsely-cut cheese, then the still-warm figs, then the pine nuts. Serve immediately.
