Tomatoes and Mozzarella


& Ginger Olive oil

  • 1 yellow tomato
  • 2 red tomatoes
  • 100g / 3.5oz cherry tomatoes
  • 3 fresh mozzarella cheeses
  • Half a chilli, chopped
  • Chives
  • Coriander
  • Salt
  • Pepper
  • Balsamic vinegar
Finely dice the yellow and red tomatoes, and  halve the cherry tomatoes.

Season the tomatoes with salt and pepper, then add the chives, coriander and chilli.

Drizzle with balsamic vinegar and a little Ginger Olive Oil. Mix and reserve.

Slice the mozzarella into rounds, and arrange three-quarters of them on a serving plate.

On top, add some of the tomatoes, then another layer of mozzarella rounds.

Add the rest of the tomatoes.

Reserve for 10 minutes at room temperature, and serve.
