French Toast with Apricots
& Seigneurs des Baux
- 3 slices of brioche, cut in two
- 400g / 14oz milk
- 1 vanilla pod
- Rum
- 70g / 2.5oz butter
- 1 egg
- 20g / 0.7oz sugar
- 300g / 10.5oz apricots, quartered
- 50g / 1.75oz honey
- 1 star anise
- 20g / 0.7oz toasted flaked almonds
- Vanilla ice cream
Boil the milk, sugar and vanilla, and leave to cool.
Add the rum to the mixture, then soak the brioche slices in it for 1 minute.
Drain them.
Beat the egg with the sugar.
Soak the brioche slices in the egg, then fry them with a little Seigneurs des Baux Olive Oil.
Remove the slices. Then, in the same pan, add the honey, star anise and apricots.
Cook gently for 3 minutes, regularly covering honey on the apricots.
Arrange the French toast on a plate, then add the apricots and sprinkle with the almonds.
Add a little Seigneurs des Baux Olive Oil.
Serve with a scoop of vanilla ice cream.
