Strawberry Soup with Mint


& Basil and Mint Olive Oil

  • 1kg / 2lb 3oz strawberries, stalked and washed
  • 50g / 2oz milk
  • 50g / 2oz muscat sweet wine
  • 200g / 7oz brown sugar
  • 30g / 1oz fresh mint (leaves only)
  • vanilla ice cream
Blitz all the ingredients and pass through a conical strainer.

Chill for 1 hour.

Served chilled with a scoop of ice cream and a little Basil & Mint or Seigneurs des Baux Olive Oil.
