It all started with a small grove of abandoned olive trees which were just begging to be reborn. We needed to learn everything from A to Z! Through a happy chain of circumstances – we were gradually able to acquire other parcels of trees – and, primarily, an eagerness to learn, we set up Castelas olive-growing estate.

Today our olive groves covers 36 hectares (about 90 acres) on the sun-drenched footslopes of Les Alpilles, and we have our own oil mill. Though essentially olive producers, we wanted to control every step in the oil-making process: from inspecting the olives in the fields through to extracting their juice at the mill. We like to press our olives without delay, to retain all of their fruitiness and freshness.
