Tomato Mozzarella

Ingredients:

  • CastelineS Ginger Olive Oil
  • 1 yellow tomato
  • 2 red tomatoes
  • 100 g cherry tomatoes
  • 3 fresh mozzarella balls
  • ½ chopped chili
  • Chives
  • Coriander
  • Salt
  • Pepper
  • Balsamic vinegar

Cut the tomatoes into small dice, then halve the cherry tomatoes.

Season the tomatoes with salt and pepper, then add chives, coriander, and chili.

Drizzle with balsamic vinegar and a dash of Ginger Olive Oil.

Mix and set aside.

Slice the mozzarella and arrange three-quarters at the bottom of a plate.

Layer some of the tomatoes on top, then add another layer of mozzarella slices.

Add the remaining tomatoes.

Let it rest for 10 minutes and serve.
