At Castelas, we have chosen to master the production of our olive oils.
We are olive oil millers and produce 100% pure fruit juice oils, in order to control every step of the production process.

An Olive Oil Crafted Like a Fine Wine

We established Moulin Castelas in 2002, modeled after a wine cellar. Indeed, the production of olive oil closely resembles that of wine. Take it from a winemaker’s daughter! The harvesting of perfectly ripe olives, the extraction of juices, the blending of varieties… everything follows a similar approach.

We chose to equip ourselves with our own mill to master the entire production process, from selecting the olive harvest date to the manufacturing method and blending. This allows us to extract the best from each variety and, above all, to create an olive oil that reflects our vision of this elixir.

Like certain winemakers, we strive to highlight the fruit and crispness of the olive in our oil, while imparting a clear, pure, and refined profile. A bit of this philosophy flows into our bottles…

Harvesting olives in the orchards

The olives are harvested with a comb and net. They are transported to the mill in paloxes containing around 300 kg of olives.

Leaf removal and traceability

On arrival at the mill, the olives are unloaded into the olive stripper. This machine operates like a powerful blower, with belts to remove leaves and branches.

Olive washing

The palox unloader unloads the olives, which are conveyed to the washer by a conveyor belt. The olives pass through this water bath to eliminate the dust accumulated during the summer. Once clean, they are conveyed by an endless screw to the crusher.

Our Miller's Anecdote

From the first light of day, I head to the mill to sort the olives that have arrived from the orchards. The fresh scent of the fruit fills the air, and the steady sound of the millstones accompanies every movement. I check the quality of each batch, adjust the pressing rhythm, and monitor the temperature to preserve all the aromas. These calm, yet demanding, moments are essential: it is here, in the hands of the miller, that the olive becomes oil and the full character of the orchard is revealed.
