Origin

Classic extra virgin olive oil is the result of a blend of four olive varieties typical of the Vallée des Baux de Provence PDO. Cold extraction at Moulin Castelas within 6 hours of harvesting enhances the vegetal character of the olive oil and preserves the complex aromas characteristic of Domaine Castelas.

Tasting Notes

This vintage is very fresh on the nose.
The aromatic persistence reveals a lovely palette of flavors on the palate: raw artichoke, almond, apple, and tomato plant.
The bitterness is subtle, and the pungency or peppery sensation appears after a few seconds in the mouth.

Suggestion

Classic is a delicate, complex, and harmonious olive oil best used as a raw drizzle.
It reveals itself equally well on hot, cooked dishes such as steamed vegetables, fish, fresh pasta, as it does on green salads, raw vegetables, and cheese.
