The CastelaS mill revisits the traditional practices of the elders of the Vallée des Baux de Provence to create Noir d’Olive. This olive oil comes from 4 varieties of olives from our orchards, harvested at full maturity and stored in pallet boxes away from oxygen. Then begins the delicate work of a slight fermentation combined with expertise to rediscover the taste of candied black olives from our ancestors’ stone mills. The whole art lies in achieving this typicality without suffering its flaws!
Tasting Notes
This vintage will delight lovers of black fruitiness. It presents all the positive attributes of the AOP Vallée des Baux aromatic palette: ‘chômé’ nose, black tapenade, candied olive, cocoa, vanilla, candied fruits, finishing with truffle aromas and a great smoothness on the palate.
Suggestion
Noir d’Olive is used cold in salads, to make mayonnaise or aioli, and drizzled over fish, mushrooms, and mashed potatoes.
