Lightly flour the meat, then brown it in a hot pan with olive oil. Remove the meat.
In the same pan, add the onion and garlic and sauté over low heat for 5 minutes.
Return the meat to the pan. Add the tomatoes, white wine, orange zest, and a pinch of salt.
Cover and simmer for 1 and a half hours over low heat.
Before serving, add the parsley and a drizzle of olive oil.
