Our Miller's Anecdote
From the first light of day, I head to the mill to sort the olives that have arrived from the orchards. I check the quality of each batch, adjust the pressing rhythm, and monitor the temperature to preserve all the aromas. These calm, yet demanding, moments are essential: it is here, in the hands of the miller, that the olive becomes oil and the full character of the orchard is revealed.
