The Oliveron is to the olive tree what the winemaker is to the vine: an artisan of taste, a creator of balance. Here, olive oil is the result of a true blending process. Each olive variety is harvested at optimal ripeness then extracted separately, to preserve its full aromatic personality. As in the world of wine, each variety brings its uniqueness: fruitiness, freshness, bitterness, herbaceous or sweeter notes. None dominates; each plays its part. Then comes the time for blending. This is where the Oliveron’s expertise is fully expressed. By combining these monovarietal oils, he seeks balance, complexity, and harmony to create an expressive, rich, and intensely fruity oil. This morning, I tasted each batch of freshly extracted oil from the different varieties. Some were fruitier, others more powerful. I adjusted the proportions to obtain a balanced blend, faithful to the character of the orchard and the identity of Domaine Castelas.
